Forest honey

Unlike blossom honey, forest honey is not made from collected flower nectar, but from honeydew, the excretions of sap-sucking insects. Forest honey has an incomparably spicy aroma and thus a special position among honey varieties. It is naturally liquid and has a dark color. These and its strong taste vary depending on the plant species and plant sucker – that’s why every forest honey is truly unique. Although there are forests all over Germany, the extraction of forest honey is a complex process.

If the beekeeper wants to harvest this special honey, he must first “wander” with his bee colonies and set them up together with hives within the flight radius of a forest area. Forest honey from honeydew is therefore a rare and unique honey specialty, in the taste of which owes its special name to the densely wooded and impassable southern Germany area. Originally overgrown with dense mixed forest, today it is mainly spruces that characterize the image of the Black Forest. A stroke of luck for the bees that live there.
